Chicken Molé

I boiled a whole chicken the other afternoon… which is not my favorite way to cook a chicken, but its a good deal. Alternatively, you can cook a couple of chicken breasts.

Chicken Molé is one of my favorite things to eat with tortillas. I realize this is not a traditional time consuming molé, but it is a good quick basic sauce. So, if you’re looking for traditional, this is not it.

The freezes super well… If you have leftovers!


1 whole cooked chicken, shredded
1/4 cup flour
3 cups chicken broth
1/4 cup chili powder
1/4 tsp. cinnamon
1 1/2 tsp. ground cumin
1 can tomato sauce

Brown flour in a dry skillet until golden.

You will smell it. Trust me, it’s fabulous. But don’t burn it!

Whisk the flour briskly while you slowly pour in the (warmed) chicken broth.

Continue to whisk while you add the spices.

Stir in the tomato sauce.

Add shredded chicken and let it all simmer, getting thicker… bubblier… and nice and hot!

Serve with tortillas and some rice and beans.

Top it with sour cream, a squeeze lime and chopped cilantro. Yum!
