Italian Sausage Sauté on Pasta

This is a dinner I have thrown together once a week for the past two weeks… And I’m planning it again tomorrow!
Its delicious.

I tend to prefer pasta dishes that are full of cheese and cream but… Claire-Rue can’t handle cheese so I have been forced to expand! This meal is basic, and yummy!

What you need:

1 package pasta
1 package sweet Italian sausage
1/2 onion, minced
4 cloves garlic
1 red bell pepper
1/2 cup white wine
2-3 cups beef broth
3 large chopped carrots
1 cup sliced mushrooms
1 cup roughly chopped spinach
Salt & pepper
1/2 tsp. Oregano
1/2 tsp. Parsley

Boil some water for your pasta… While waiting sauté the sausage.

(The first time I made this, I used shredded pork left overs from the previous nights dinner. I think you could use most any meat!)

When sausage is thoroughly cooked, strain out most of the fat. Place on a paper towel to continue to drain the grease.

In the same pan you cooked the sausage in, sauté the onion, garlic and bell pepper.

Once soft and golden, pour the wine over the top and let it bubble for a moment.

Then add the beef broth, carrots, and mushrooms. Put the lid on and let it simmer for 5 minutes.

After 5 minutes, take the lid off and add sausage, spices and spinach.

Cover, and simmer until the veggies are tender. Test and adjust spices as needed. Pour broth and toppings over a bowl of pasta… And enjoy!
